I have moderate troube getting the outer blades off, but the center blade is impossible. Now the bolts are pretty well stripped and I have
invested 2 hours in trying to get if off, unsuccessfully. Any tips, now that the bolts are stripped.

You say the bolts are stripped. I guess you are talking about the heads. Soak the bolts with penetrating oil overnight. If you have a pair of visegripe pliers you maybe able to lock them on the bolt head. Also a good hard rap on the bolt head with a hammer may help. I use antisieze compound on all my mower bolts.
Take the deck off if you haven’t already. This may help in not rounding off the heads of the bolts. As noted use a vise grip and maybe just a bit of heat. Replace the bolts with new ones when you put it back together.
